The roots of the Pillot family do not need to be searched under a microscope: these were venerable coopers from Chassagne-Montrachet, who were no strangers to viticulture, in the 17th century. Two centuries later their descendants abandoned the manufacture of barrels and focused exclusively on winemaking, gradually expanding their holdings in the commune. In 2001, Fernand Pillot and his son Laurent returned the Pommard vineyards from the lease and increased their holdings to 15 hectares in 22 appellations. Pommard is considered to be the main domain besides Chassagne-Montrachet, but in fact the "coverage" is very wide: Santenay, Saint-Aubin, Puligny-Montrachet, Meursault, Volnay, Beaune…

The methods of work in the vineyards and the winery are quite traditional, the care of Fernand and Laurent vines is called "agrobiological", in fact it is a mix of lutte raisonnee and organics. Since 2012, Domaine Fernand & Laurent Pillot has been a participant of the pilot program DEPHY, a phytosanitary regulator, whose goal is to reduce the scope of pesticides and herbicides by 50%.

Vinification takes place at a modern winery, where special attention is paid to traditional Burgundian techniques, such as aging white wines in 228-liter "pièce" barrels made by local craftsmen, and minimal batonnage to avoid excessive yeast tone. In recent years, Adrian Pillot, the Laurent’s son, representing the 6th generation of the dynasty has enthusiastically joined the work. Adrian returned from internships in Oregon and New Zealand and is determined to experiment with whole bunches in red wines, and has already convinced his father to increase the aging time and reduce the percentage of new oak in whites.
