In 2013, Greater Dijon had 160 hectares. It is a part of the picturesque plateau between John, Plombier-le-Dijon and Corseille-le-Monts. The buying was the part of a strategy to preserve the region’s green spaces and provide farmers.

Land management was committed to the Chamber of Agriculture of Côte d’Or and the management of 8 hectares of vineyards was taken over by the most famous person in Burgundy — Mark Soyar.

5 hectares of Pinot Noir and 3 hectares of Chardonnay and Aligote were categorized by Bourgogone AOC to these plantings it was allowed to add another 13 hectares.

Mark was made to pay his rent to the owners of the land, factually the city of Dijon, in bottles. It is the responsibility of the winemaker who had gone through school in Von Roman was serious. Additionally, the authorities strongly recommended that a tasting room be equipped on the farm now it is accessible to everyone.
Mark studied winemaking in Von Roman with Jean-Yves Bizot and it was there that his views on organic and biodynamic methods of farming and wine production were formed.

Nowadays the grapes are vinified with or without partial destemming, only with wild yeasts, with minimal addition of sulfur. The experiments concern only the size of the barrel in which the wine is traditionally aged and the materials from which the barrels are made: it is individually for each wine, Mark selects a barrel made of oak, chestnut or acacia.

Domaine de la Cras is licensed to produce wines under the Côtes de Dijon appellation. Mark Soyar personally owns two small prestigious lots in the south of Côte d’Or.

In the first quarter of the 20th century, the ancestors of today’s owners of the Cheurlin Noellat estate in Bar-sur-Seine acquired several vineyard plots. The fourth generation of winemakers is Anne-Cecile Sherlen. She leads all the processes in Champagne and her brother Maxime Noella continues the work of his parents in Vaughn Roman.

The nice farm of recoltants is open to wine lovers and offers four of its cuvees for tasting. In the assortment of Wine Bank it is the freshest and most cheerful — Carte D * Or Brut.

The nearest administrative center to the economy is the city of Troyes. It is much more southerly and much less famous than, for instance, Reims.

Many consider southern Champagne to be bizarre. The vineyards here are located on the plateau of the Jurassic period, which makes the taste of wines extremely distinctive.

Brut Golden Card is made from 100% Pinot Noir of various vintages, fermented in acacia barrels, aged on the lees for at least 36 months and aged in the bottle for at least three.
