Another small community is in the Côte de Beaune. It is a sub-region called Saint-Aubin is known, maybe not so widely, otherwise, in terms of the ratio of vineyard areas and their quality, it is one of the top ones in Beaune: 75% of the parcels are occupied by 30 (!) Premier Cru. Additionally, it is a very attractive price tag for most Saint-Aubin wines allows them to act as a kind of guide to the world of Burgundy, both red and white of its "kingdoms".

About 20 years ago, the commune had an uncertain reputation for making undemanding Pinot Noirs, but in recent years, thanks to the growing popularity of white Côte de Beaune wines, Saint-Aubin growers and winemakers have turned their eyes to Chardonnay and to the creative think about it one more time. And even today, plantings of this variety make up ¾ (140 H) of the entire territory of the commune and this is far from the limit. AOC Saint-Aubin was originated in 1937, and 40 years later, the Premier Cru climate classification was introduced there, 3 years earlier than that of the famous eastern neighbors.
