Domain Ann Bavard-Brooks is a small estate in Pugligny-Montrachet, founded 12 years ago, by new vineyard owners in a historic location.

Pyligny and the unsurpassed fame of their white wines is entirely due to such dedicated terroir winemakers. Its location in the most prestigious area imposes a special responsibility on winemakers.

In 2017, the National Institute of Origin and Wine Quality registered a new appellation, the Burgundy Cote d’Or. The new wines are Chardonnays harvested strictly within a certain area, produced with a significant limitation of yields — La Combe (valley) and Les Equinces (horses), previously produced in the Burgundy AOC. These plots occupy 0, 36 and 0, 78 hectares respectively.

The wines from these plots are usually of light straw color, with silvery green highlights. In the aroma, we can detect flowering trees and shrubs — lemon, almond, acacia, pear and hawthorn, as well as faint notes of anise, blossoming lime, mint and even pineapple, especially if the vineyard is dominated by clay soil. On the palate, there are salty notes, brioche and licorice.

It is recommended to serve the wines with a rather rich in flavor gastronomy — poultry pates and rillettes, salted or smoked salmon, snails in garlic sauce, chicken in cream sauce, soft and aged cheeses, even such powerful ones as Parmesan, for example.

Also since 2010, from a 0.07 hectare plot, a magnificent vinification of Pugligny Corvee des Vignes, which translates simply as Vine Care or Vineyard Work.

The techniques used in the vineyards and winery are exclusively organic and biodynamic. The winery received its official organic certificate in 2012.
